Makes 4 servings
Ingredients:
- 2 oz pancetta chopped
- 1 yellow onion chopped
- 15oz chopped tomatoes
- 1 cup marinated artichoke hearts
- 1/2 cup green olives chopped
- 1 tbsp olive oil
- 4 cod filets
- 1/4 tsp red pepper flakes
- 1 1/2 tsp fresh thyme
- 1/2 white grape juice
Instructions:
Heat a large pan over medium heat and add chopped pancetta and cook for 3 minutes then remove and let drain on a paper towel. Discard oil and then return pan to the heat and add olive oil and fish and cook on one side for 4 minutes then remove from heat. To the pan add onion thyme and red pepper flakes and sauté for 4 minutes then add tomato, green olives and artichoke hearts and cook for 4 more minutes then add the fish back into the pan, cover and reduce heat to low and cook for 3 more minutes. Top with pancetta and enjoy!

This is a delightful dish. The flavors are amazing and it comes together quite fast. Perfect for dinner or lunch. Would work nicely for a dinner party or modified for a night alone!
I’ve been trying a lot more Mediterranean dishes lately and you can expect to see more of them here. They are such a pleasure to make and I really enjoy using the fresh herbs that the recipes often call for- using fresh herbs really is a whole other experience because of scent and the way it permeates throughout the whole kitchen when they are heated.
